Pumpkin Cake Recipe - THM

Is there really anything better than the scent of autumn spices... and pumpkin cake? The way it warms you and entices you to try a bite or two? This recipe is low-carb, sugar-free, gluten-free if you like, and can be nut- and/or dairy-free. It is a favorite for breakfast as well as dessert. I hope you love it as much as I do!

The texture of this cake is a lot like pumpkin pie filling if you bake for only 30 minutes, and more like a bread at 40 minutes or a cake if you leave it for around 50 minutes. I have baked it for an hour and it had a wonderfully light cake texture. So it's versatile AND tastes like pumpkin pie!
